The soul of the restaurant

Our common adventure began in 2015, when we met in a three star Michelin restaurant, La Villa Madie, in Cassis, in Provence, strong of this experience, we continued our evolution in other houses such as Les Morainières two Michelin stars or, La Maison Benoît Vidal two Michelin stars, in Savoy.

For a few years, we have been maturing the project of making people discover our culinary universe.

Since that day, we welcome you to L'ABISSIOU in a modern and warm setting, in the heart of Les Sables d'Olonne, between the port and the beach to discover a modern and creative cuisine.

Kitchen side

Passionate about cooking since I was very young, I had the chance to work with star chefs and to train with them.

I invite you to come and taste my elegant cuisine, which focuses on local products and seasonality.

Room side

After several years in large houses, I chose to settle in the Vendée, a region that is particularly close to my heart.

I will be happy to welcome you with a smile and friendliness and to advise you in the best way to make you spend a pleasant moment.
